- For more juicy and flavors, use chicken thighs instead of breast
- If you are not a fan of garlic and you feel this recipe too garlicky then substitute garlic for a few teaspoons of onion powder.
- You can use almond milk instead of regular milk
- Substitute with dried parsley instead of fresh parsley.
- I am using cooked penne boiled in water, to give it extra flavor boil the penne in chicken stock or broth with an extra little salt. (Just by doing this, your kids will enjoy the noddles all alone)
- You can add mushrooms and broccoli when you are cooking the chicken pieces
- Add some cooked asparagus into the sauce.
- Use cheddar cheese or mozzarella instead of parmesan

- Add more milk to make more sauce if it’s too little for your family.
- If the sauce becomes too thick adding more milk is an easy fix
- If the sauce is too thin as per your preference, add cornstarch to thicken the sauce.
- If you feel the sauce is too flour-y, then add a touch of lemon.
What To Do With The Leftovers?
If you have any leftovers, pack them in an airtight container and store in the fridge. When you are ready to eat the next day, I recommend adding more parmesan cheese and milk before microwaving. (This will make it creamier)

Chicken Alfredo Pasta (Penne)
This creamy chicken alfredo penne pasta is an easy one-pan meal with delicious chicken alfredo pasta sauce made in less than 30 minutes and perfect for dinner.
Ingredients
For the sauce
- 2 tablespoons butter
- 3 tablespoons flour
- 3 cloves garlic, minced
- 2 cups milk (or almond milk)
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ½ cup shredded parmesan cheese
- 1 teaspoon salt and pepper
For the chicken
- 1.5 pound chicken breast, boneless, skinless, cut into strips or cubed
- 2 tablespoons butter
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- 1 teaspoon salt and pepper
- 16 oz penne pasta, cooked
- ¼ cup fresh parsley (or dried)
- ¼ cup shredded parmesan cheese
Instructions
- Heat a pan over medium-high heat, add butter, once melted add the chicken breast pieces.
- Add oregano, basil and season with salt and pepper. Stir everything and cook for about 8-10 minutes or until chicken is tender and fully cooked. Remove from the pan and set aside.
- Let's make the alfredo chicken pasta sauce - Add butter to the same pan and once melted add garlic and saute for few minutes or until softened.
- Add half of the flour and stir until well mixed. Add the rest of the flour and stir well.
- Pour in the milk (little at a time), stir well in between or until sauce begins to thicken.
- Add oregano, basil and season with salt and pepper. Stir well.
- Add parmesan cheese and give it a good mix until melted. Done!
- Take a bowl and place the cooked pasta, pour the sauce all over the pasta, (for more flavor let the penne sit in Alfredo sauce for a little longer) add the chicken and give it a good mix.
- Add extra parmesan and parsley and mix well.
- Serve immediately!
