How to Make Ground Beef Stroganoff

Brown the beef
In a large skillet over medium heat, cook the ground beef with chopped onion and garlic until the meat is browned and the onion is soft.

Add mushrooms and broth
Stir in sliced mushrooms and sauté for a few minutes. Pour in the beef broth, season with salt and pepper, and simmer for 5–10 minutes to reduce slightly.

Cook noodles
Meanwhile, bring a pot of salted water to boil and cook egg noodles according to package directions.

Thicken the sauce
Make a slurry with cornstarch and cold water, then slowly stir it into the sauce. Simmer until thickened.

Add sour cream
Turn off the heat and stir in the sour cream. Don’t boil the sauce once the sour cream is in—it might curdle.

Serve
Spoon over warm noodles and garnish with parsley or cracked black pepper if desired.

Tips & Variations

  • Want a richer flavor? Add a teaspoon of Dijon mustard or some chopped thyme to the sauce.
  • No sour cream? Use plain Greek yogurt as a substitute.
  • Using ground turkey or chicken? Add extra seasonings and a beef bouillon cube to boost flavor.
  • Add-ins: A dash of smoked paprika or a little chopped bacon cooked with the beef adds smoky depth.

How to Serve It

  • Egg noodles – The classic base for stroganoff.
  • Mashed potatoes – Creamy potatoes + creamy sauce = comfort heaven.
  • Rice or quinoa – For a slightly lighter option.
  • Bread rolls – Spoon it inside a soft bun for a sloppy joe-style twist.

Add a side salad or roasted green beans and a piece of crusty bread to mop up the sauce.

Storing & Reheating

To Refrigerate
Store in an airtight container in the fridge for 3–4 days.

To Freeze
Freeze just the beef stroganoff (without noodles) for best texture. Thaw in the fridge overnight before reheating.

To Reheat
Warm on the stovetop over low heat or in the microwave. Stir gently and add a splash of broth or milk if the sauce has thickened too much.
