Ingredients
- 2 packets udon noodles, pre-cooked vacuum packed (or dried udon)
- 2 chicken breasts, boneless, skinless, cut into bite-sized pieces
- salt and pepper to taste
- 1 tbsp cooking oil
- 1 cup shiitake mushrooms, stems trimmed
- 1 cup white cabbage, sliced
- 1 carrot, julienned
- 3 green onions green parts, and white parts separated and sliced
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce (or dashi stock)
- 1 tsp sesame oil optional
- 2 tbsp mirin or dry sherry
Instructions
- Season chicken with salt and pepper.
- Prepare the udon as per the package instructions. Rinse. Skip this step if using pre-cooked udon.
- Heat a large pan over high heat, and add oil, once hot, add the chicken and sear the chicken to lock the juices.
