Ingredients

  • 2 packets udon noodles, pre-cooked vacuum packed (or dried udon)
  • 2 chicken breasts, boneless, skinless, cut into bite-sized pieces
  • salt and pepper to taste
  • 1 tbsp cooking oil
  • 1 cup shiitake mushrooms, stems trimmed
  • 1 cup white cabbage, sliced
  • 1 carrot, julienned
  • 3 green onions green parts, and white parts separated and sliced
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce (or dashi stock)
  • 1 tsp sesame oil optional
  • 2 tbsp mirin or dry sherry

Instructions

  1. Season chicken with salt and pepper.
  2. Prepare the udon as per the package instructions. Rinse. Skip this step if using pre-cooked udon.
  3. Heat a large pan over high heat, and add oil, once hot, add the chicken and sear the chicken to lock the juices.
  4. Reduce heat to medium, add vegetables and white parts of the green onions. Stir fry for about 5-7 minutes or until cooked to just bite.
  5. Add the udon noodles and the green onions, then add mirin, soy sauce, and dashi stock.
  6. Toss to coat with the noodles and sauce for about 2-3 minutes or until heated through.
  7. Drizzle with sesame oil on the top and serve immediately.
