Keto Chicken Stew – Tips

Thicken the stew – If you prefer a thicker stew, you can mash a small portion of cooked vegetables with a fork and return it to the pot. Alternatively, add a tablespoon of xanthan gum or glucomannan powder for a thickener.

Leftovers – This stew reheats beautifully! Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 2-3 months. Reheat at 400 degrees for about 10-15 minutes or heat in a microwave. Carefully watch the chicken or it will dry out quickly.

Slow Cooker Option – Combine all ingredients in your slow cooker and cook on low for 6-8 hours, or on high for 4-5 hours, until the chicken is tender and vegetables are cooked through.
