Ingredients

  • 10 chicken thighs, boneless skinless
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/8 teaspoon ground cloves
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon ground coriander
  • 1 zucchini cubed (medium size)
  • ½ onion chopped
  • 3 garlic cloves, minced
  • ½ teaspoon dried thyme
  • 6 ounces jarred roasted peppers, sliced
  • 1 1/2 cups chicken stock (or broth)
  • ½ cup green olives pitted & halved
  • 4 thin slices of lemon
  • pinch of red pepper flakes
  • 1 teaspoon parsley, chopped
  • Salt & Pepper, or to taste

Instructions

  1. In a small mixing bowl, add all the spices - paprika, coriander, cinnamon, cloves and cumin. Mix well.
  2. Season chicken with salt and half of the spice rub on both sides.
  3. Heat a pan over medium-high heat. Add 1 tablespoon of oil, once hot, add the chicken and cook for about 2-3 minutes, or until golden brown.
  4. Flip and cook on the other side for another 2-3 minutes. Remove and set aside and reserve any juices.
  5. Reduce the heat, and add 2 teaspoons of oil. Add chopped onions, thyme, zucchini, ¼ teaspoon salt and pepper. Stir and cook for about 10 minutes.
  6. Add the garlic cloves and cook for 2-3 minutes. Add the olives, roasted peppers, and chicken along with the juices.
  7. Add chicken stock. Place the lemon slices over the chicken with the sliced chiles.
  8. Bring to a boil, reduce heat, and simmer cook uncovered for about 20-25 minutes, or until the stock has reduced as desired.
  9. Sprinkle over parsley and serve along side cauliflower rice.
