Bread – You can buy any store bought low carb keto bread from the grocery store. Or make your own quick homemade bread as directed below:

  • In a mug, add melted butter, beaten egg, baking powder, and salt. Whisk well.
  • Place the mug in the Microwave for about 80-90 seconds until firm and cooked through.
  • Use it immediately or store it in a tightly sealed container in the fridge for up to 3 days.
  • When ready to eat, add butter in a pan and toast the bread slices.

Spice – For a little kick, add just a tablespoon of cayenne pepper, for mild, add 2.5-3 tbsp and for a spicy kick, add 3-5 tablespoons of cayenne pepper powder.

Sweetener – Use any brown sugar substitute like Swerve Brown Sugar to get caramel-like flavour or use any other regular erythritol or another sweetener.

Chicken – Use boneless skinless chicken thighs to get that juicy flavor as the chicken breasts will dry up pretty quickly

Ingredients

Spices

  • 2-4 tablespoon cayenne pepper
  • 1 teaspoon paprika powder
  • 2 tablespoon swerve brown sweetener
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt and black pepper

Chicken

Instructions

  1. In a small bowl mix all the spice ingredients.
  2. Sprinkle half of the spice blend on both sides of the chicken thighs. Keep in the fridge for 30-40 minutes.
  3. Preheat the air fryer to 400°F
  4. In one bowl, add 1 egg, buttermilk, and hot sauce. Mix together.
  5. In another bowl mix together the pork rind crumbs, almond flour, and salt and pepper.
  6. Firstly, dip each piece of chicken thigh into the egg mixture. Coat well and then dredge into the breadcrumb mixture on both sides.
  7. Lightly spray the air fryer basket with cooking spray. Place the chicken thighs into the basket. Lightly spray with cooking spray on the top.
  8. Air fry for 8 minutes on each side. Spray with oil on each side and cook for another 2 minutes per side.
  9. Remove the chicken and place on a clean wire rack on top of a baking sheet.
  10. Add the melted butter to the remaining spice blend mix and brush the onto the chicken thighs.
  11. Serve on a low carb bun with added lettuce and mayo.
