Ingredients

  • 1 tablespoon butter
  • 2 medium carrots, chopped
  • 1 ¼ onion, finely diced
  • 1 small leek, chopped or green beans
  • 3 medium stalks of celery, chopped
  • 1 tablespoon thyme leaves, chopped
  • 1 minced garlic clove
  • 1.5 quarts chicken stock
  • 8 g fresh parsley
  • 2 bay leaves
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste
  • 2.5 cups cooked shredded chicken (or raw chicken thighs or breasts)
  • 1 cup kale, chopped
  • 1 teaspoon fresh parsley
  • A squeeze of lemon juice
  • 1 tablespoon olive oil

Instructions

  1. Heat a soup pot over medium-high heat. Add butter or olive oil. Then add onion, leek carrots, 2/3 of the parsley, chopped thyme, and celery, and cook for about 5 minutes until soft. Add minced garlic and sauté for another 2 - 3 minutes.
  2. Add the chicken stock, bay leaves, and salt pepper. Bring to a simmer, cover the lid, and for 15 minutes.
  3. Add the cooked shredded or rotisserie chicken. In a large bowl, remove half of the soup mixture and pulse with a stick blender or grinder, and make a thick paste.
  4. Pour the soup back into the pan. Add greens and simmer for about a minute or until softened
  5. Add a squeeze of lemon with olive oil and swirl into the soup. Add butter and top with fresh chopped parsley, adjust the seasoning as per the taste.
