  • 1 1/4 pounds chicken breasts, boneless skinless, thinly sliced
  • 2 tablespoons olive oil, divided
  • 2 bell pepper, thinly sliced (Red and yellow)
  • 1 yellow onion, thinly sliced (halved)
  • 1/2 teaspoon smoked paprika
  • 1 1/2 teaspoons Italian seasoning
  • 1 cup shredded provolone cheese
  • Kosher salt and fresh ground black pepper to taste
