- 6 chicken thighs, skinless, boneless, cut into 1″ cubes
- 4 tbsp ghee (or butter)
- 2 quarts chicken bone broth or stock
- 1 cup carrots, peeled and sliced
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 2 stalks of celery, sliced
- 2 tsp fresh thyme
- 1/2 lemon, juiced
- salt and pepper to taste
- Instant Pot
- Set your Instant Pot to saute mode, add butter and let it completely melt.
- Add carrots, garlic, onion, celery and saute for 5 minutes.
- Add raw chicken pieces, broth, and herbs.
- Put on the lid and seal, Put on the lid set pressure on High for 4 minutes and let it naturally release the pressure.
- Add lemon juice, salt and pepper and adjust herbs as needed.
- Done! Serve hot.
