Ingredients

  • 6 chicken thighs, skinless, boneless, cut into 1″ cubes
  • 4 tbsp ghee (or butter)
  • 2 quarts chicken bone broth or stock
  • 1 cup carrots, peeled and sliced
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 2 stalks of celery, sliced
  • 2 tsp fresh thyme
  • 1/2 lemon, juiced
  • salt and pepper to taste

Instructions

  1. Set your Instant Pot to saute mode, add butter and let it completely melt.
  2. Add carrots, garlic, onion, celery and saute for 5 minutes.
  3. Add raw chicken pieces, broth, and herbs.
  4. Put on the lid and seal, Put on the lid set pressure on High for 4 minutes and let it naturally release the pressure.
  5. Add lemon juice, salt and pepper and adjust herbs as needed.
  6. Done! Serve hot.
